If you’ve joined us for a meal or a drink at The Falcon Steakhouse in the past year, chances are you’ve already met Holly Jones — one of the friendly faces you’ll find behind the bar, on the floor, and welcoming guests in our dining room.
Holly has been part of The Falcon family for nearly twelve months, and in that short time, she’s made a big impact. With years of hospitality experience under her belt, Holly brings professionalism, quick wit, and a calm charm to every shift. She’s also the kind of teammate who never hesitates to step up — whether that’s helping out when the team is short-staffed, covering an extra shift, or simply lifting everyone’s spirits with her infectious laugh.

Life Beyond The Falcon
Away from work, Holly leads a busy life as a devoted mum of two. Family time is at the heart of her world, but she still makes time for her own passions too. Whether she’s braving a cold-water swim, losing herself in a good book, or just soaking up moments of calm, Holly knows how to balance the demands of hospitality with life outside of work.

Working in a steakhouse has its perks — and naturally, we had to ask Holly about her go-to choices from our menu. Here’s what she picked:
Starter: Brie Wedges with Sweet Chilli Sauce
Steak: 16oz Ribeye (Medium Rare) — with double Onion Rings, Skinny Fries, Peppercorn Sauce, and a side of Mac & Cheese
Dessert: “It’s gotta be Banoffee Pie!”
With taste like that, we’d say Holly knows how to order in style!
What Holly Loves About The Falcon
When asked what she enjoys most about being part of The Falcon team, Holly didn’t hesitate:
“The team — it’s like a little family. Funny, supportive, and always up for a laugh. Plus… the free roast for working on a Sunday? Yes, please!”
