Meat The Team: Travis

This week we’re introducing Travis, you’ll usually find Travis behind the bar, chatting with guests, and showing off his encyclopaedic knowledge of the menu. If there’s one thing you should know about him, it’s that he has a genuine love for just about everything The Falcon serves — and he’s not shy about convincing you to try it, too.

Born and bred right here in Wotton-under-Edge, Travis has worked in just about every hospitality venue in town before joining The Falcon in 2021. These days, he’s part of the furniture, combining confidence with charm. Think of him as Wotton’s answer to Gordon Ramsay — if Gordon Ramsay had a soft spot for Thatchers Gold and homemade onion rings.

Life Beyond The Falcon

When he’s not upselling the full steak experience (sides and sauces always recommended), Travis is likely off on his travels. Thailand was his most recent adventure, but closer to home, you’ll often spot him legging it up Ludgate Hill to get his steps in before a shift.

Naturally, Travis has strong opinions when it comes to the menu. Here’s what he’d order if he were dining in:

• Starter: Goats Cheese Salad

• Steak: 24oz T-Bone, Medium-Rare

• Regular Sides: Dressed Salad Leaves & Buttered Tenderstem Broccoli (yes, he knows it’s a large side — and no, he’s not sorry)

• Large Side: Dauphinoise Potatoes

• Extras: Homemade Onion Rings & Classic Stilton Sauce

• Dessert: Banoffee Pie

• Drink of Choice: Thatcher's Gold
