Meet Phil 👋
If you’ve interacted with our social media, visited one of our Steak & Quiz Nights, browsed our website, or seen a camera pointed in your direction during an event, there’s a very good chance Phil was behind it somewhere 😅
Phil has been part of the journey with Andy since 2015, first starting at The Rose & Crown in Nympsfield as a Kitchen Porter before steadily working his way through almost every part of hospitality imaginable.

From KP to Commercial & Operations Manager
Over the years, Phil moved through the kitchen as a second chef and dessert chef before heading out front as a waiter, then onto the bar, eventually becoming General Manager.
When The Rose & Crown came to an end, Phil transferred down to The Falcon Steakhouse, where he now works as our Commercial & Operations Manager — handling a huge amount of the behind-the-scenes work that keeps everything moving.
From managing the website and social media to creating our monthly Steak & Quiz Nights, organising promotions, helping shape the customer experience, and constantly coming up with new ideas, Phil has become a huge part of The Falcon’s day-to-day operation.
He also played a major role in helping The Falcon secure its 2024 Muddy Stilettos award 🏆 — and now has his sights firmly set on helping bring home the SoGlos Best Restaurant award for 2026 👀
Life Beyond The Falcon
Outside of work, Phil is heavily involved in the UK JDM car scene as the founder of Square Society — one of the country’s best-known clubs dedicated to “square cars.”
From organising club stands and national events to designing merchandise and running the club’s website and socials, a lot of his spare time still somehow revolves around organisation, creativity, and cars 😅
Locals will probably recognise Phil by his very unusual project too — a Nissan Cube Z11.
Away from work and the automotive world, Phil also has a very supportive partner, Alana, and three children — Theo, Esme & Otis ❤️

Steak - The Chef's Plate (7oz Fillet (Rare) & 10oz Ribeye(Medium-Rare))
Sides - Dressed Salad Leaves, Homemade Onion Rings & Chunky Chips
Chef's Plate Sauces - Peppercorn, Stilton & Falcon Beef Dripping (Phil likes to mix Peppercorn & Stilton together for a cheesy sauce with a kick)
Dessert - Sticky Toffee Pudding with Rum & Raisin ice-cream

What Phil Loves About The Falcon
For Phil, the best part about working at The Falcon has always been the people.
From working alongside Andy & Jim over the years, to the team behind the scenes and the locals who walk through the doors every week, there’s always something happening — and usually plenty of laughter somewhere in the building 😅
The Falcon has always been more than just a workplace. It’s become a huge part of Phil’s life over the last decade, watching the business evolve while helping shape a lot of the creative ideas and experiences that guests now know The Falcon for.
As Phil puts it:

From KP to management, it’s been a long journey — and one that’s helped shape not only the business itself, but also the atmosphere, creativity, and community feel that so many people now associate with The Falcon Steakhouse.
