Meat The Team: Dee

Every great kitchen needs someone to keep everything running smoothly — and at The Falcon, that’s Dee.
Joining us back in 2021, Dee brought with her over 12 years of hospitality experience. Since then, she’s become an essential part of the team, known not just for her hard work but for her sharp wit and big personality. Affectionately nicknamed “Derrick” by the chefs, she’s the heart of the banter and the glue that keeps the kitchen ticking.

Life Beyond The Falcon
Outside of work, Dee loves nothing more than hitting the road in her campervan to explore new corners of the UK (we’re fairly sure she has more holidays than Thomas Cook!). She also gives her time to a cause close to her heart: volunteering with her dogs at Pets as Therapy.
Family is hugely important to Dee. She and her husband, Thomas, recently celebrated 20 wonderful years of marriage — and when she’s not travelling or working, you’ll usually find her spending time with those who matter most.
Dee’s Falcon Favourites
When Dee’s on the other side of the sink and gets to enjoy a meal herself, here’s what she picks from the menu:
Starter: Homemade Scotch Egg
Steak: 7oz Fillet
Sides: Creamed Wild Mushrooms, Pesto Roasted Plum Tomato & Buttered Tenderstem Broccoli
Extras: Stilton Sauce
Dessert: Eton Mess
Drink of Choice: A whole bottle of Nicolas Feuillatte Champagne (because why not?)
What Dee Loves About The Falcon
Ask Dee what she enjoys most about being part of The Falcon, and she’ll tell you straight:
“Working with all the chefs, the daily banter, and being able to keep my ‘boys’ in check! I also love that I can walk to work (though sometimes I drive… but my parking doesn’t go down very well!).”
