Today we bring you the amazing Francesca, who has been part of our team for 2 years now. Currently studying six form at KLB, Fran is the Princess of the Sunday lunch shift. Fran enjoys playing hockey and is also an accomplished tap dancer hence the nickname "two-step"! One of the friendliest front of house members of staff you'll ever likely to meet. Her only flaw is that she has been known to go home with the ordering tablet safely tucked away in her apron on multiple occasions but just like a boomerang it always comes back 😂! Working with Fran is an absolute dream because not only is she incredible at her job but her worth ethic is second to none!

For a fillet steak how would you eat yours?

Different steaks require different cooking. We're going to film a deep dive video next week going through the different cuts of meats and how we recommend them cooked. As a rule of thumb I personally recommend all steaks to be cooked medium rare. For me this is the perfect balance of tenderness, flavour and temperature.

Couple of things worth remembering though in regards to our steaks here at The Falcon:

Personally I wouldn't recommend our ribeyes, rumps or flat irons cooked blue or even rare, because of the amount of fat marbled through the steak, and with their thickness at lower cooking temperatures, the fats wouldn't have a chance to render out. And you'll be left with quite a bit of uncooked fat in the steak. But when cooked at medium rare the full flavour comes to life and gives you a juicy fantastic steak.

And also I personally wouldn't recommend our leaner cuts like our fillet and châteaubriand cooked past medium. The more you cook a lean steak, the dryer, tougher (and smaller) the steak becomes. But at rare or medium rare you'll have the most tender beautiful steak to enjoy!

So for me it's lean steaks rare to medium & fatty steaks medium rare or medium.

But if you do enjoy a well done steak, a well done steak will still be better at The Falcon than anywhere else 👍

But as always....the choice is yours 🥩

If you've been in dining with us, chances are you've met this guy! Jim is the general manager here at the Falcon and one of the main reasons for our success. When it comes to the front of house there isn't many better in the industry than Jim. A keen cellerman with a passion for real ale and the true king of the list! You'll find his note book never too far from him!
